It's only in recent years that I've come to enjoy mushrooms, this of course thanks to Mister MessyVC (who is not at all messy). While they're still not an absolute favourite, a go-to comfort food as they are for him, I'm always happy to try a new mushroom recipe.
In this tester recipe for The Urban Vegan, I used a mix of white button mushrooms and meaty shiitakes (my absolute favourite) and per recipe instructions prepared them in a super easy and tasty wine-based marinade. Along with some fat juicy green olives and a good baguette, these are going to be a great summer picnic staple.
