It comes as no surprise then that this lemongrass drink is a popular refreshment in Thailand! In Britain we are usually much less fortunate with the weather, but this summer has been a scorcher so if you're looking for easy iced tea recipes then this lemongrass juice is perfect.
Not only is this iced lemongrass drink a refreshing midday cooler, but it also has the added benefit of aiding in calming mouth fires born from a spicy meal. Lemongrass iced tea is an ideal accompaniment to dishes like my vegan gaeng kua kling recipe.

Lemongrass Juice / Drink (น้ำตะไคร้)
Remember this lemongrass juice is meant to be quite sweet. Serve it with lots of ice on a hot day alongside spicy food in order to soothe the fire in your mouth. If your lemongrass stalks are piddly supermarket sized, increase the quantity.
Servings 2 glasses
Ingredients
- 5 large stalks lemongrass
- 2 ½ cups water
- ¼-½ cup sugar
- Large pinch salt
- Fresh Lime
Instructions
- Cut lemongrass into thin slices. Add to a saucepan with the water and simmer for 7-8 minutes. Mix in the sugar and stir to dissolve. Allow to cool and then strain out the lemongrass. Serve with plenty of ice.
