Okara recipes

Okara is the insoluble pulp or soybean residue left behind after straining puréed, cooked soybeans to produce soy milk and tofu. Soy lees are extremely versatile and are rich in dietery fibre. Don't throw this valuable ingredient away! Check out my okara recipes for inspiration on how to cook with it.
