One of my great regrets regarding my too brief foray into Vancouver's vegan food scene is that I wasn't able to devote time to sit down at Chau VeggieExpress to enjoy a hot meal onsite. Instead I grabbed a quick takeaway of Bun Chay: shredded bean curd, peanuts, crispy shallots, pickled vegetables, and fresh herbs, served with rice vermicelli noodles and spring rolls. I had a pinch while it was still warm and it was right on par with what you'd find in any top Vietnamese restaurant. Even later, cold, as a midnight snack, it was outstanding. It isn't a 100% vegan restaurant, but staff are knowledgeable about vegetarian versus vegan menu items. This is a great spot for a week night meal, when you want to pop out for a tasty bite but not linger (although now you can apparently enjoy local craft beers and mojitos with your meal, so maybe you could make a night of it).
